Cajun Style Meat Pie 🥧

  • 1lb omnivore beef 80% lean 20% fat
  • 2 shallots, minced
  • 2 garlic cloves, minced
  • 1 roll 
  • 2 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp cajun seasoning
  • 1 tsp tabasco hot sauce

Preparation 

Step 1- Make the dough

This is the easiest pie dough you'll ever make. It's called 3-2-1 pie dough which means we have 3 parts flour, 2 parts butter, and 1 part water- that's it!

First, mix the flour and the butter together in a large enough bowl and begin to "cut" the butter into the flour. To do this, take a fork and begin to break up the butter into smaller pieces that are coated with the flour. Keep doing this until you have crumbs that are about the size of almonds and peas. 

Add in the water and mix until it just comes together into a shaggy mass. 

Next, dump the dough onto a clean work surface and use your hands to bring the dough together, folding about a 1/3rd of it over itself at a time to create delicious layers. Do this until the dough comes together but there's still chunks of the butter throughout. 

Wrap with plastic wrap and keep refrigerated!

Step 2- Make the filling

In a medium-sized pan over medium heat, add in the Omnivore beef, shallots, and garlic. While using a wooden spoon, begin to break up the beef into smaller pieces. You'll notice that the fat will begin to render out and will cook the shallots and garlic. Cook until the beef is dark brown in color and the shallots and garlic are soft.

Step 3- Finish the filling, preheat the oven.

In the pan with the beef, shallots, and garlic, mix in the paprika, garlic powder, onion powder, cajun seasoning, tabasco, and salt. The beef should be cooked through at this point so give it a try! Turn off the heat so the filling cools down by the time you fill the meat pies!

Line a sheet tray with parchment paper and preheat the oven to 425 degrees F.

Step 4- Roll the dough!

While the filling cools, take out the dough from the fridge and cut it into 12 equal-sized pieces. Using a rolling pin, roll out the dough into round disks that are about the thickness of 2 quarters.

Step 5- Make the pies!

Starting with the dough disc flat on the counter, take about 3 TBSP of filling and put it onto half of the dough disc, keeping a 1/4 inch perimeter. After, fold the dough over and crimp the edges shut using a fork. Place on the baking tray and repeat, using all the dough.

Step 6- Cook

Once they're all filled, closed, and on the baking sheet, brush the outsides with the melted butter and bake in the oven for 15 minutes or until they're golden brown. 

Step 7- Serve

Let them cool before serving and enjoy! 

TIP:

These taste delicious with grape jelly, mustard, or other sweet jams!
