FOR THE SAUCE
Get your bamboo skewers soaking in warm water and your taste buds ready! We'll be cooking the kefta on medium to high heat on a flat top or grill.
In a medium bowl, crumble in the omnivore meats beef then add all of the fresh herbs, dried spices, and garlic. Mix together thoroughly and place it in the refrigerator.
In a small bowl, mix together all of the sauce ingredients and chill it in the fridge until we're ready to spread.
Remove the chilled omnivore meats mixture from the refrigerator and divide it into 12 equal portions. Next, take the soaked bamboo skewers and form each ball onto the skewer to resemble a sausage. Place formed kefta on a hot griddle or grill and sear until browned and fully cooked.
Serve on a bed of spinach and arugula. You can either dip the kefta into the sauce or drizzle over the top of them on a plate.
