Bacon Jalapeño Cheddar Cheese "Smash" Burger

Servings: 3 Burgers            

Ingredients

FOR THE BURGER
  •  1lb omnivore meats beef
  • 2 tbsp diced jalapeño
  • 2 tbsp diced sharp cheddar
  • 2 tsp onion powder         
  • 2 tsp salt                         
  • 1 tsp garlic powder         
  • 1 tsp black pepper         
  • 1 tsp Worcestershire sauce
  • 1/2 tsp fish sauce           
  • 1/2 tsp soy sauce    
FOR THE SAUCE
  • 3 tbsp mayo                     
  • 2 tsp chipotle chili puree
  • 1 tsp Sriracha hot sauce 
  • 1/2 tsp salt                     
  • 1 pinch cinnamon  
FOR THE TOPPINGS
  • 3 grilled jalapeños, seeded           
  • 6 slices thick-cut bacon      
  • 6 slices cheddar cheese 
  • 1 tbsp olive oil   
  • 1 pinch salt
FOR THE BUN
  • 3 potato hamburger buns
  • 2 tbsp melted butter  

 

Preparation 

Step 1

Let's get cooking! Begin heating your burger cooking surface, whatever it may be! We'll be cooking the burgers on medium to high heat. You're going to be cooking in no time.

Step 2

In a medium bowl, crumble in the omnivore meats beef then add all of the dry and liquid seasonings for the burger and mix together with your hands because it's more fun that way. (The dry spices and liquid spices I pretty much use in every burger recipe as they give incredible umami flavor to the burger.) Place in the refrigerator while we get everything else prepared.

Step 3

In a small bowl, mix together all of the sauce ingredients and chill it in the fridge until we're ready to spread.

Step 4

Keeping it simple. Wash the jalapeños well and then pat dry and place on a clean rag to dry. Season with olive oil and salt then char on a smoking hot cooking surface. Cook bacon in a skillet on medium heat until crispy then drain on a paper towel about 4 minutes per side. 

Step 5

Grab the omnivore meats beef mixture from the fridge. Form into six equal size balls and set on a clean plate. Season outside of the meat with adequate salt & pepper. Place each meatball on a hot flat cooking surface and smash it flat with your spatula. Thin and crispy patties are the goal here. Cook them on and cook for about 2-3 minutes on each side. 

Step 6

While your patties are cooking on the second side, grab your buns and lather them in melted butter. An even layer of butter on the buns will result in even toasting. Place the buns butter side down on the surface of whatever you're cooking the burgers on and let them get golden brown. It's okay if a little burger juice gets on the buns... What.. are you afraid of flavor? At this point, put a slice of sharp cheddar cheese on each burger patty to melt.

Step 7

It's double bacon jalapeños cheddar cheese smash burger time! Say that three times fast.. Let your burgers rest for a few minutes after they come off the cooking surface to hold in the yummy juices. Put a spread of the sauce on the base of the bun then place the burger on top. Next comes another dollop of sauce then another patty, bacon, and grilled jalapeños. These are double cheeseburgers so each bun gets two cheese-covered patties! Tear into them in the sun with your favorite people!
